At Yakitori Ichinao, located in the Marunouchi area of Nagoya City,
Aichi Prefecture,
we use only high grade charcoal to grill our prized yakitori.
Upon entering the restaurant, the savory,
delicious aroma stimulates one's appetite.
The relaxed atmosphere of the recessed floor seating is excellent for visitors,
eating on the way home from work, dates, or girls' nights out.

The secrets of Ichinao's delicious skewers
- Sauce
- The secret sauce made through repeated trial and error.
The flavor of the soy sauce is preserved as it is mixed to
make a unique sauce to complement the skewers.
Even now, we continue to search each day for a sauce
which complements our yakitori even more.
- Salt
- We use Mongolian rock salt which has a slight sweetness.
This is an important supporting role, as it brings out the
yakitori's umami.
- Stock
- We cook leeks, onions, carrots, ginger,
and other vegetables along with chicken
meat and chicken bones for 3 hours to
make our stock.
The tenderness of the
chicken gives a sense of its umami and
sweetness, while the flavor gives it depth.
- Technique
- The store owner's technique from
more than 10 years of yakitori experience.
Using only the feel of his hands,
he carefully grills the chicken as though
by smoking it with the meat juice dripping
from it.
